Ingredients:
2 lbs frozen blueberries
1 tbsp butter
1/3 cup brown sugar
1 tsp nutmeg
1 tsp salt
1 lemon juiced
2 tsp xanthan gum (use cornstarch as an alternative about 2 tbsp?)
2 sheets puff pastry

Put
the first 6 ingredients in a sauce pan, uncovered, high heat for 15
min. Turn the flame off and put in the xanthan gum. Mix thoroughly.
Place aside.
Place
each sheet of puff pastry on a floured surface. Then cut it into four
squares. Fill each with the filling. Brush each piece with melted
butter.
Bake on 350°F for about 20 - 25 min.
When cooled, dust the roll ups with powder sugar.
